- 1 whole chicken (3-4 lbs.)
- ½ cup of olive oil
- Your choice of either Big Fat Belly Good Original or Hot Cajun Seasoning
Pre-heat oven to 350°. Rinse the chicken inside and out with water and pat dry. Cut slits in the skin between the breast and thighs. Coat the entire chicken with olive oil inside and out. Shake either Big Fat Belly Good Original or Hot Cajun Seasoning into the hollow cavity and the slits. Then, coat the outside evenly with the Big Fat Belly Good Cajun Seasoning of your choice. Coat the pan with non-stick cooking spray and place the chicken into the pan. Place the pan into the heated oven and cook for 45 minutes or until chicken is done (170° internal temperature with a meat thermometer).
